And the sweets continues! Here are some few favorites of mine and my family that I made yesterday night with my little niece Vivian's help ;)
[ My Mini Little Baker - Vivian Huang ]
She is super-duper adorable! Every time she comes down to visit, she'll want to bake with me - LOVE IT!!!
My Favorite & A Few Others - IT'S A MUST TRY recipe! I bet you can't stop popping them in your mouth like me every time I bake them, because I sure ate like 10 non-stop!!! It's sooo good! I strongly suggest DO NOT omit the espresso powder, it enhances the chocolate!!!
These are my family and a few friends favorite! I don't really eat cheesecake, but when I bake, I try a little and it does taste yummie! I always add a little more lemon juice and zest to enhance the flavor a little depending on who I am baking for and my family and a few friends LOVE the extra lemony flavor! ;)
Instead of the Chocolate Chunk, separated the dough into two and made (1) Pretzels M&M's Cookies and (2) White Chocolate, Chocolate and Cranberries Cookies. The dough is super soft and chewy! It's really really yummie! Give it a try and you'll love it.

I got this recipe from a friend, but I added some other spices to it. Scroll down to get the recipe and give it a try. You'll love them as well too! Make it plain, add some mini chocolate chips, or anything you like. It's very yummie! Always my to-go-to Banana Bread Recipe! ;) Make them into a loaf, mini muffins, muffins, squares, etc! I've tried them all and it always turns out yummie!
Thanks for dropping by! I hope you like some of my favorite recipes! Let me know how they turn out if you're trying them by posting a comment - would really appreciate it.

[ Vegan Banana Bread Recipe ]
Ingredients: 1/2 cup unsalted butter at room temperature (or 1/4 cup unsalted butter and 1/4 cup applesauce)
1/2 cup of white sugar
1/2 cup of brown sugar
1-2 teaspoons vanilla
2-3 very ripe mashed bananas (about 1 1/2 cups)
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons of cinnamon
1/4 teaspoon of nutmeg
1/2 teaspoon of pumpkin spice
1 cup walnuts (optional)
Directions:
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8 x 4 inch loaf pan (this can be made in any size pan or muffin tins just adjust the baking time).
- In a large bowl, mix the butter, white sugar, and brown sugar until combined. Mix in the vanilla until combine. If using applesauce, mix that in.
- If you like not-too-chunky-bananas, follow this step: On a separate bowl, peel the brown spotty bananas and mashed them using a fork until it is somewhat lumpy. Then add it into the wet mixture and mix it, it will be very liquidly.
- On a separate bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, pumpkin spice; mix until combine.
- Mix the wet and dry ingredients together until just combine (with few flour left is okay).
- If you like chunky bananas, follow this step if you've omitted step 3: On a separate bowl, peel the brown spotty bananas and mashed them using a fork leaving some chucks and a lot of lumps. Then fold it into the dough until it is combined - do not overmix.
- Bake in preheated oven for about 45-60 minutes, or until toothpick comes out clear. I like mines a little crispy brown on the top. For mini muffins/squares, I usually bake mine between 12-15 minutes. For regular muffins, I bake mine for about 24-30 minutes. It really depends on your oven.
